Pistachios can replace most any other nut in sweet and savory dishes, whether mixed into cookie dough or simply sprinkled on salads. Blend pistachios with basil, garlic, olive oil and Parmesan cheese to make a pesto, or saute them with mushrooms, onions and Parmesan cheese. Both versions make great toppings and spreads, or flavorings for ground meat and vegetables. Grind pistachio nuts into pistachio flour and use it to replace half the all-purpose flour in cakes or pancakes.
